Weekend Notes: Snippets of S'mores

This weekend we were invited to a birthday BBQ, and as soon as I heard the word "BBQ," I knew for certain what I wanted to bring: s'mores brownies.

I am a sucker for anything s'mores, and when I was first introduced to this recipe last summer from these beautiful blogs, I knew it was a keeper.  I've made these brownies a couple times now, and they are a crowd-pleaser across the board.  They are super simple to make, so I'd suggest making some to brighten up this dreary weekend weather.

S'mores Brownies

01.     1 (21.5 ounce) package brownie mix
02.     1 1/2 cups miniature marshmallows
03.     6 graham crackers
04.     8 (1.5 ounce) bars milk chocolate, coarsely chopped (I bought Trader Joe's Pound Plus Bar, and used about two-thirds of the bar)

Preheat oven to 350 degrees. Prepare brownie mix according to package instructions.  Spread into a greased 9x13 inch pan - I lined mine with foil first, for easier clean-up.

In a medium bowl, break graham crackers into 1 inch pieces and toss with miniature marshmallows and milk chocolate.  Set s'more mixture aside.

Bake brownies for 15 minutes in the preheated oven (or until the brownie mix no longer looks super gooey in the pan). Remove, and sprinkle the s'more mixture evenly over the top.  Bake for an additional 15 to 20 minutes, or until a toothpick inserted in the center comes out clean (from the brownie layer).

Allow brownies to cool before cutting into squares.
