Irish Eyes are Smiling

Happy St. Patrick's day, all!  Having graduated from the school of the Fighting Irish, this holiday is always welcome in my book.  I get excited when I see people in the streets wearing kelly green - it brings me back to football Saturdays and happy times, and makes me feel like we're all rooting for the Irish (for a day).  Now that we're all grown up, we will be celebrating with our friends Regina and Josh, who will be cooking up a feast of corned beef and cabbage and hearty sides.  They throw the most well-thought out, creative, and delicious get-togethers, so we are looking forward to what we know will be a great meal and fun company.

To get in the spirit, I spent some time checking out recipes to bring, and decided on two - Irish Soda Bread to compliment the meal, and Irish Lace Cookies for dessert (with mint chocolate chip ice cream).  I've never made bread from scratch before, so I was a little weary.  However, the simple list of ingredients and my handy stand mixer got the job done in about 15 minutes, excluding the baking time.  I stuck the bread in the oven and let it do its thing while I got started with the cookies.  The cookies were also pretty simple to make, but got a little time consuming when prepping the cookies to bake.

Hope this bread tastes as good as it looks!  The "samples" that I had of the cookies were delicious, but did not photograph well.  Maybe next time.
